- 1 cup sugar
- 1 cup water
Instructions
- Combine blueberries, water, and sugar in a saucepan over medium heat.
- Lightly mash the blueberries as they warm to release their juice.
- Bring the mixture to a gentle simmer, then reduce the heat to low and simmer for about 10 minutes, stirring occasionally.
- Remove from heat and let cool for 20 minutes.
- Strain the mixture through a fine mesh sieve into a clean container, pressing on the solids to extract the liquid.
- Store the syrup in the fridge for up to 2 weeks.
Notes
Adjust the sweetness by adding more or less sugar according to taste.
This syrup pairs beautifully with pancakes, waffles, and cocktails.
