Ingredients

  • 2 ounces gin
  • 2 ounces fresh grapefruit juice
  • 1/2 ounce fresh lemon juice
  • 1/2 ounce simple syrup
  • 2 ounces chilled sparkling water or club soda
  • 1 cup ice, divided as needed
  • 1 thin grapefruit wheel
  • 1 small fresh rosemary sprig


Instructions

  1. Juice enough grapefruit to obtain 2 ounces of fresh grapefruit juice. Juice a lemon to get 1/2 ounce of fresh lemon juice. Slice a thin grapefruit wheel for garnish and set aside a small fresh rosemary sprig.
  2. Fill a cocktail shaker with about 1/2 cup of ice. Add 2 ounces of gin, 2 ounces of fresh grapefruit juice, 1/2 ounce of fresh lemon juice, and 1/2 ounce of simple syrup.
  3. Seal the shaker and shake vigorously for 10 to 15 seconds until the outside feels very cold.
  4. Add the remaining 1/2 cup of ice or enough to fill a tall Collins glass nearly to the top.
  5. Strain the shaken mixture over the ice in the Collins glass.
  6. Top with 2 ounces of chilled sparkling water. Give it a gentle stir. Garnish with the thin grapefruit wheel and rosemary sprig.

Notes

Adjust the sweetness by varying the amount of simple syrup to your taste.
For a non-alcoholic version, replace gin with additional sparkling water.
Fresh ingredients yield the best flavor, especially with citrus juices.
