  • 2 cups ice, divided
  • 12 fresh mint leaves, plus 2 extra small mint sprigs for garnish
  • 2 tablespoons fresh lime juice
  • 1 tablespoon simple syrup
  • 1/2 cup pineapple juice, chilled
  • 1/4 cup coconut cream, well stirred
  • 2 cups lemon-lime soda, chilled
  • 4 thin lime slices for garnish


Instructions

  1. Muddle the mint leaves, lime juice, and simple syrup in the bottom of two tall glasses until fragrant.
  2. Fill each glass with 1 cup of ice, packing it close to the top to keep the drink cold.
  3. Pour 1/4 cup of chilled pineapple juice into each glass, allowing it to settle around the mint.
  4. Slowly add 2 tablespoons of well-stirred coconut cream into each glass, creating swirling layers.
  5. Top with 1 cup of chilled lemon-lime soda in each glass, stirring gently to mix without losing fizz.
  6. Garnish each drink with 2 thin lime slices and a small mint sprig. Serve immediately.

Notes

Fresh mint is key for the best flavor; avoid over-muddling.
Adjust the sweetness by adding more or less simple syrup according to your taste.
