Ingredients

  • 2 ounces light rum
  • 1/2 cup chopped watermelon
  • 5 large mint leaves
  • 1 ounce simple syrup
  • 1/2 ounce lime juice, freshly squeezed
  • Garnish: watermelon slice and mint sprig


Instructions

  1. Begin by placing the cubed watermelon into a blender and blend until smooth.
  2. Pour the blended watermelon through a mesh strainer to eliminate any pulp or seeds.
  3. In a glass, add the fresh mint leaves. Use a muddler or the back of a wooden spoon to gently press and twist the mint, releasing its oils.
  4. Fill the glass with ice cubes.
  5. Add the strained watermelon juice, lime juice, rum, and simple syrup. Stir well to combine.
  6. Garnish the drink with a lime wheel or watermelon slice, and a fresh mint sprig, if desired.

Notes

For a non-alcoholic version, omit the rum and replace it with additional watermelon juice or a splash of soda water.
